SICILIAN-STYLE SWORDFISH

Presentation. Sicilian-style Swordfish is one of the most beloved delicacies in Sicilian cuisine. A dish that tells the story of the sea and land of Sicily with its typical ingredients such as swordfish, capers from the minor islands, olives, and cherry tomatoes. What makes this dish particularly delicious is the “ghiotta,” the succulent sauce in which the fish is immersed. Here’s a simple recipe for a finger-licking dish!

Ingredients for 4 people: 300g sliced swordfish; 250g cherry tomatoes; ½ onion; 2 cloves of garlic; 2 tablespoons of desalted capers; pitted green or black olives; extra virgin olive oil; parsley; salt and pepper.

Preparation. Rinse the capers under water to remove some of the salt. Wash the cherry tomatoes and cut them in half. In a pan, sauté the finely chopped onions and two thinly sliced cloves of garlic in generous extra virgin olive oil for a couple of minutes. Add the cherry tomatoes, pitted olives, capers, salt, and pepper, and let it cook for twenty minutes. After cleaning and drying the swordfish slices, add them to the pan and let them cook for 5 minutes. Flip the slices and cook for an additional 2 or 3 minutes. Serve the swordfish with the obtained sauce and a handful of chopped parsley.
